Cheese Muffins

I looove these muffins!  They aren’t really breakfast muffins – more of a savory muffin to have alongside soup or a main meal, but still, SUPER yummy.  These come from my favorite blogger of them all, Pioneer Woman.  I usually make them for thanksgiving dinner, and they always get gobbled up.  They are easy and quick, so make some tonight! :-)

Cheese Muffins from Fig via the Pioneer Woman.

Ingredients:

1 1/2 C. flour
1 1/2 TBS. sugar
1 TBS. baking powder
1/2 tsp. salt
3 C. shredded colby-jack cheese
1 C. milk
1 egg
1/4 cup melted butter

Whisk together dry ingredients, then stir in cheese.

In a separate bowl, whisk egg, milk, and butter together. Pour milk mixture into dry ingredients and stir with a spoon to combine.

Bake in greased muffin tin at 375 degrees for 20-25 minutes.

Makes 12.
