These cookies are the MOST chocolaty cookies I have ever had. If you are craving chocolate, these will definitely satisfy you! I used an entire bag of chocolate chips, but I would suggest only using half a bag.
Adapted from Ghirardelli Ultimate Double Chocolate Cookies
11.5 ounces 60% chocolate (2 cups if using chips)
6 T butter
1/2 cup sugar
1/2 cup brown sugar
1/3 cup flour
1/2 teaspoon baking powder
1 bag chocolate chips (about 2 cups) (again, I suggest you only use 1/2 a bag)
Melt the 60% chocolate and butter in a double boiler. Meanwhile, using a mixer, mix the three eggs and sugar until thick. When the chocolate/butter is melted, stir it in to the egg mixture. Then in a separate bowl, sift the flour and baking power together and stir into the wet mixture. Then add the chocolate chips. The dough should be really sticky. Divide it in half and roll it into logs about 2 inches around using plastic wrap. Then put in the freezer until it’s hard enough to cut. Pre-heat the oven to 350. When the dough is hard enough, cut into 3/4 inch slices and put on a greased cookie sheet about 1 and a half inches apart. Bake for about 13 minutes or until the middle is soft and the top is a little shiny. Enjoy with a big glass of milk!
