I love all kinds of salsa, and this was the first time I have ever made mango salsa. It was really good. We had it with some chicken tacos. What a perfect way to bring in the warm weather!
I adapted this recipe from Good Things Catered. You can go there to see the original recipe. I added cilantro and a tomato-that’s really the only difference besides the pepper because we don’t have jalapenos here.
2 ripe mangos, peeled and chopped
1 medium sized tomato, chopped
1 medium-heat pepper, finely chopped
1 small red onion, finely chopped
1/2 red pepper, finely chopped
1 T chopped cilantro (opt.)
Juice of one lime
In a medium bowl, combine and add salt if needed. We didn’t add any to ours. So good and easy!
