“Cream of Something” soup substitute

Seriously – what is with recipes calling for Cream of ____ soup?  I understand that in the U.S. it’s like the ultimate cooking shortcut.  But here in Russia…we don’t get no shortcuts! 🙂  EVER. 🙂  This is a long established fact when it comes to processing new visas, getting the proper medical verification for our work permits, dealing with any bureaucratic agency of any kind, asking for change for a large bill, trying to pick up a package at the post office, and, cooking longed-for holiday dishes from home for Thanksgiving.

So, since we don’t get any shortcuts ’round these parts, here’s an easy way to make your own “Cream of ____ soup substitute to use in recipes.  It’s a lot healthier for you too!

Cream of _____ Soup Substitute


  • 1 TBS. butter
  • 3 TBS. flour
  • 1/2 C. chicken broth
  • 1/2 C. milk
  • Salt and pepper

Melt butter in a saucepan over low-med heat.  Stir in flour until smooth and bubbly.  Remove from heat and add chicken broth and milk, stirring constantly so that the mixture remains smooth.  Add salt and pepper to taste.  You can substitute chicken brother for vegetable broth, beef broth, mushroom broth, etc. for a different kind of cream of ____ soup.  The recipe above will yield the amount that is in one can of the soup on the shelf.  So just double or triple, etc., depending on what your recipe calls for.
